Make proper Spanish-style chorizo at home.
This traditional Spanish chorizo seasoning brings smoky paprika, garlic, and chilli together for authentic Spanish salami flavour. It is designed for dry-cured chorizo that you hang and age, not fresh cooking chorizo.
This 150g pack seasons approximately 5kg of meat. You will also need a curing salt (like Prague Powder #2) to make it safe for dry-curing.
Mince your pork with some back fat (20-30% fat ratio works well), mix in the seasoning and cure, stuff into casings, then hang to dry and develop that classic chorizo tang.
