Curing salts are essential, and for air-dried meats you need the right combination of Nitrites and Nitrates for safe, long-term curing.
Misty Gully Cure #2 is specifically designed for salami and other air-dried or air-cured meats. Also known as Prague powder #2 or Instacure #2, this cure contains 6% Sodium Nitrite, 4% Sodium Nitrate, and approximately 90% regular salt. It's dyed pink for safety so you won't mistake it for regular salt.
Here's why the combination matters:
Nitrites protect your meat in the early stages of curing, while Nitrates break down into Nitrites over time, giving your salami the ongoing protection it needs during that slow air-drying process. This cure is only suitable for air-dried salamis and air-cured meats – not for quick cures like bacon or ham.
Misty Gully's curing salts are perfectly balanced so you can confidently make salami safely at home.
How to use
Use 3g per kg of meat mixture. Do not substitute for cooking salt. Do not ingest directly.
