A fresh wort kit for brewing an American Pale Ale at home that sits right in the sweet spot of the style: bright, hoppy, accessible, and just complex enough to be interesting without demanding anything difficult from the person drinking it. The Mercenary is all citrus and flashes of pine, with a touch of sweetness before the clean, satisfying bitter finish that makes you want another one immediately.

American Pale Ales are arguably the most versatile beer in homebrew — they work at barbecues, in front of the TV, at the end of a long day, or paired with almost any food you put in front of them. The Mercenary does everything you want a pale ale to do without overcomplicating any of it, which is exactly why it has been a core All Inn Brewing range staple for so long.

Brewing Instructions

Step 1: Decant the fresh wort into a clean and sanitised fermenter.

Step 2: Add 5 litres of water to bring the total volume to 20 litres.

Step 3: Take a sample of your wort and use a hydrometer to measure the original gravity.

Step 4: Aerate the wort and pitch your yeast.

Step 5: If dry hopping, add your hops when fermentation is nearly complete. Leave for no more than 3 days.

Step 6: Once fermentation is complete, cold crash or transfer directly to bottles or a keg for conditioning.

Step 7: Enjoy responsibly.

Note: Adding water is optional.
Skipping this step will produce a beer with a higher ABV and a lower yield.
