Crisp as a katana. Clean as a mountain spring. This is the Kissaki.

A fresh wort kit for brewing a Japanese-style rice lager at home that delivers the same precision and clarity the style is famous for. The Kissaki is built on a delicate rice malt base that produces a lighter, cleaner body than a standard barley lager, with Saaz and Sorachi Ace hops delivering subtle lemon, dill, and floral notes that make the finish genuinely distinctive without ever getting in the way of the beer's essential crispness.

This is the style that Japanese craft breweries have refined into an art form — a lager that manages to be both exceptionally light and exceptionally flavourful at the same time, which is harder to achieve than it sounds. It is the ideal warm-weather beer, the ideal food pairing beer, and the ideal reward for a brew day done well.

Yeast not included. For best results, ferment at low temperature between 14 and 16 degrees Celsius. Makes 20 litres. FWKs are available instore or via local delivery only.

Brewing Instructions

Step 1: Decant the fresh wort into a clean and sanitised fermenter.

Step 2: Add 5 litres of water to bring the total volume to 20 litres.

Step 3: Take a sample of your wort and use a hydrometer to measure the original gravity.

Step 4: Aerate the wort and pitch your yeast.

Step 5: If dry hopping, add your hops when fermentation is nearly complete. Leave for no more than 3 days.

Step 6: Once fermentation is complete, cold crash or transfer directly to bottles or a keg for conditioning.

Step 7: Enjoy responsibly.

Note: Adding water is optional.
Skipping this step will produce a beer with a higher ABV and a lower yield.
