Still Spirits Air Still Infusion Basket

This stainless steel basket is suitable to infuse vodka with botanicals, lemon or orange peel, cinnamon sticks, chilli or other flavouring ingredients. Simply clips into the inside of the Air Still lid.

Vapour infusion works by passing the distillation vapour through the packed botanicals before it condenses into distillate.

The hot vapour extracts the volatile aromatic compounds — the oils, esters and flavour molecules — from the botanicals as it passes through, carrying them into the finished spirit.

Because the extraction happens at vapour temperature rather than boiling point, it tends to preserve more delicate floral and citrus aromatics than simply steeping the botanicals in spirit after distillation.

The result is a more vibrant, freshly-infused character.

Best suited for: making botanical vodka, gin-style spirits and other infused spirits with the Air Still.
