Distiller's glucoamylase enzyme for saccharification — breaks down short-chain dextrins in starch mashes into simple fermentable sugars that yeast can convert to alcohol.
This is the second enzyme in the two-enzyme grain mashing process. Alpha-amylase (step one) liquefies the starch into shorter dextrin chains at high temperatures.
Glucoamylase (step two) then converts those dextrins into simple glucose molecules at lower temperatures during the saccharification step.
Without this step, the mash contains dextrins that yeast cannot ferment, leaving residual unfermented starch and lower alcohol yield.
Net weight: 12g. Sufficient for up to 10kg of starch or 25L.
